Roasting Christmas Turkey

I actually posted my Christmas (I know it was months ago!) turkey in MalaysiaBest.  However, over on that site, I never use any photos with parts of the pig.

I am going to do it here because some readers may not understand when I said, “Wrap bacons before roasting”

To get a turkey that looks pretty like this one, one need to cover the top (breast side) when roasting.   I had done the same thing with my chicken too.  Just buy yourself about 200 grammes of streaky bacons and slap them on top of the bird before putting into the oven.

Keep watching the bacon.  When they are shriveled, brown and crispy, remove them from the turkey.  It is simply the best-est, crispiest bacon.  Let the turkey continue roasting.

You will get a moist on the inside and crispy skin turkey.  Of course, do read from MalaysiaBest how I stuff butter in between the skin and the flesh of the turkey.  I merely season my turkey with XO brandy and salt.

Ahh…now I cannot wait for Christmas to come again.
