What is ‘wat tan hor’?

PICT1262

Over here in Penang, people hardly use the name ‘Wat Tan Hor’. We have Char Hor Fun and that’s it. But when we are in KL, we normally eat Wat Tan Hor. So, back home, we ordered WTH and get the above. It is plain char hor fun, isn’t it?

So, can someone explain to me the difference between char hor fun and wat tan hor?

See? It is just the thicker hor fun without beehoon with the same ingredients, right?

Oh….how I miss this. I used to have this a lot when I was back in Penang.

The difference between Char Hor Fun and Wat Tan Hor is the hor fun. The one in Penang uses thicker hor fun, while the one in KL/Ipoh uses thin hor fun. The rest seems to me to be the same too.

‘wat tan’ refers to the egg. it’s directly translated as ‘smooth-egg’ flat noodles.

in KL, wat tarn hor is fried hor fun laden with a starchy eggy sauce. where else char hor fun or commonly known as korn chau (dry fry) hor fun is just stir fry hor fun something similar to char koay teow texture.

In KL when we order, wat tan hor is the kueyteow alone while the one with meehoon as well we call yinyong. Otherwise I do think our wattanhor and your char hor fun are the same thing..

Thanks everyone. Now the mystery is solved. It is indeed char hor fun using the thinner kueh teow. But I still prefer KL version ‘cos our Penang version is really char hor fun only.

since last requesting the recipe, I have tracked down several recipes and tips to make it. I have now pretty much perfected it, and am basically really happy with it. The main thing for me is get my wok screamingly blazingly hot, and also while first cooking the noodles, to tip in a bit of rice wine so the alchohol in it flames up over the noodles. so good. homemade chicken stock also makes a huge difference compared to the canned stuff.

I am still interested in any more advice or tips to get it as real as I can, in my kitchen.

jbarnes – Congrats! I marvel at your technique of getting the flames to jump when you pour in alchohol.

Adeeline – i am sorry I have no idea how to cook ‘cos they are not available in Penang, usually in the KL area. Good luck!
